Brazilian Cheese Bread Waffles

Equipment

Ingredients 
 

  • 1 cup milk
  • 2 tbsp butter
  • 2 cups sweet tapioca starch polvilho doce
  • 2 eggs
  • 1 cup parmesan cheese shredded
  • 1/2 tsp salt
  • 1 tbsp chia seeds

Instructions

  • In a bowl, combine the milk and butter and microwave for about 40s until the butter melts, mix and set aside.
  • Add the eggs and whisk until fully combined with the milk and butter mixture.
  • Mix in the tapioca flour, cheese and salt.
  • Heat up your waffle maker (I like to use the highest setting for the crunchiest waffles).
  • Brush a little butter to grease the waffle maker.
  • Fill with batter, close and wait 3,4 minutes until golden (The time will depend on the brand and size of your waffle maker).
  • Enjoy warm!

Notes

  • The nutrition facts are for each serving of this recipe and are estimated values.
  • Follow your waffle maker's manufacturer's instructions before using it. For the crunchiest waffles, I recommend using the highest temperature setting and greasing it with a little butter at each load.
  • You can add some chia seeds for additional nutrition.
  • I like using whole cow's milk as it results in more golden waffles. When using almond or oat milk, the waffles are more pale.
