Instructions
Melt the Chocolate
Warm the heavy cream in a small saucepan over low heat or microwave for 1 ½ minutes until steaming but not boiling.
Pour it over the finely chopped chocolate or chocolate chips. Let it stand for one minute and stir until smooth.
Pasteurize the Egg Whites (Optional)
Using a small pan, bring some water to a boil (fill about 1/3 / pan).
Place the egg whites and sugar into a heat proof bowl.
Place the bowl on top of the pan and whisk constantly until it reaches 71°F.
Remove from heat.
Whip the Egg Whites
Place the pasteurized egg white mixture in a clean mixing bowl.
Beat at a medium speed until foamy, then increase to high speed. After 2-3 minutes, check the texture.
Fold the Mousse
Stir in the whipped cream to lighten the cooled chocolate mixture using a rubber spatula to fold from the bottom of the bowl up and over the center.
Notes
The egg whites will move from soft peaks to medium peaks, then stiff peaks. Stop when the peaks stand upright and look glossy; overmixing can dry them out and make them hard to fold.Use broad, gentle strokes and stop as soon as the mousse mixture is uniform. Vigorous stirring will push out the air that gives traditional mousse its lift. You can use raw eggs or pasteurized egg whites (homemade) by following my recipe instructions. Carton egg whites will not whip.
