Easy Salmon & Sweet Potato Cakes (Baby-Led Weaning)

These Easy Salmon & Sweet Potato Cakes (Baby Led Weaning) can be made in less than 20 minutes using leftover cooked salmon (or canned) and freeze beautifully for a quick weeknight dinner!

Equipment

Ingredients 
 

  • 250 g salmon cooked (about 2 fillets)
  • 200 g sweet potato cooked (about 1 medium)
  • 1 egg
  • 1 tbsp green onion
  • 4 tbsp all purpose flour
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/3 cup corn meal
  • 2 tbsp olive oil for cooking
  • 1/4 tsp salt omit for babies <12m old

Instructions

  • With a fork, shred the leftover salmon fillets into small pieces.
  • Mash the cooked sweet potatoes.
  • In a medium size bowl, add all the ingredients (except the corn meal) and combine well.
  • Spoon the mixture, making small salmon burgers or cakes.
  • Coat the salmon patties with corn meal or breadcrumbs.
  • Heat a large skillet over medium heat, add some olive oil and cook the salmon patties for about 2-3 minutes per side.
  • Enjoy warm or let the salmon patties cool, add them to an airtight container and freeze for later!

Notes

  • When offering to babies between 6-9 months, cut the salmon cakes into “fingers” for palmar grasp.
  • For babies >9m old you can cut the patties into small bite size pieces to practice pincer grasp.
  • When offering to older babies >12m old and toddlers you may add ¼ tsp salt.
  • Let the cooked salmon patties cool and store them in an airtight container or Ziploc bag.
    • Refrigerated: 3 days
    • Frozen: 3 months.
