In a bowl, mix the all-purpose flour, oat flour, baking powder and brown sugar.
In a separate bowl, whisk the wet ingredients (melted butter, milk, and egg).
Add the dry ingredients to the wet bowl and mix until combined. Be sure to not overmix!
Let the batter rest for 3-5 minutes. This will make your pancakes fluffier as the baking powder activates.
Heat a skillet or pancake pan over medium heat and add some butter or coconut oil.
Drop ¼ cup batter for regular size American pancakes (make sure the batter does not spread too much) or 1/8 cup for smaller pancakes for kids. Cook until bubbles appear on top, and you can flip.
Flip and cook another minute and serve!
