These Fluffy American Pancakes are made with only a few simple ingredients, and it is an easy yummy breakfast for the entire family!

Equipment

Ingredients  

  • 3/4 cup milk
  • 1 egg large
  • 2 tbsp butter melted (or 1 1/2 tbsp room temperature)
  • 1/2 cup all purpose flour
  • 1/2 cup oat flour
  • 2 tsp baking powder
  • 1 tbsp brown sugar

Instructions

  • In a bowl, mix the all-purpose flour, oat flour, baking powder and brown sugar.
  • In a separate bowl, whisk the wet ingredients (melted butter, milk, and egg).
  • Add the dry ingredients to the wet bowl and mix until combined. Be sure to not overmix!
  • Let the batter rest for 3-5 minutes. This will make your pancakes fluffier as the baking powder activates.
  • Heat a skillet or pancake pan over medium heat and add some butter or coconut oil.
  • Drop ¼ cup batter for regular size American pancakes (make sure the batter does not spread too much) or 1/8 cup for smaller pancakes for kids. Cook until bubbles appear on top, and you can flip.
  • Flip and cook another minute and serve!

Notes

  • Use a good nonstick pan.
  • Cook on low-medium heat! Make sure that you do not rush the process, you want fluffy and golden pancakes!
  • Grease your pan with butter or coconut oil between batches.
  • Flip the pancakes with confidence when you see bubbles forming on top.
  • Do not overmix! Combine wet / dry and stir until just combined.
