Homemade Goldfish Cheese Crackers (Crunchy!)

Are your kids obsessed with goldfish cheese crackers? Let’s make these little fishies at home so they can have their favorite snack the healthier way. These cheesy crackers are extra crunchy, flaky and just melt-in-the-mouth delicious!

  • 1 3/4 cup all-purpose flour
  • 9 tbsp unsalted butter cut into cubes and chilled
  • 2 cups cheddar cheese grated
  • 1/2 tsp smoked paprika
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 2 tbsp chia seeds optional

Instructions

  • Preheat the oven to 400F and grease a large baking sheet (or line with parchment paper).
  • Add the flour, spices and butter to a food processor, and blitz until it resembles fine breadcrumbs.
  • Add cheese and chia seeds (if using), blitz until the dough comes together.
  • Split the dough into 3 parts. Roll out each part between 1/8 to 1/4 inch thick, dusting with flour as needed (or roll between 2 sheets of parchment paper).
  • Shape the crackers using your favorite cookie cutter or use a pizza slicer. Re-roll excess dough and repeat process.
  • Place crackers on non-stick baking tray andprod each one with a fork (so that they don’t puff as much – if using a small cookie cutter, such as goldfish this is not necessary).
  • Bake for 8-10 minutes until golden and crispy (keep an eye on the crackers every minute to prevent burning, they brown quickly after the 8 min mark!).

Notes

  • Keeping your butter and cheese cold is a must. Cold butter cut into cubes helps create a flaky texture in the crackers. I ensure my butter is chilled and my cheese is at room temperature but not too warm. 
  • Use a good food processor. This one is my favorite!
  • When rolling out the dough, aim for a thickness of 1/8 inch (3mm) to 1/4 inch (6mm) so the crackers bake evenly and become perfectly crisp. 
  •  Small cookie cutters are added work, but this 5-in-one fish-shaped cutter makes the process easier! You can also use a pizza slicer if you want a quicker process.
  • Line your baking tray or cookie sheet with parchment paper to prevent the crackers from sticking.
