Equipment

  • 1 Sauce pan
  • 1 Frying pan

Ingredients 
 

  • 1 cup elbow macaroni
  • 1 tbsp butter
  • 1 tbsp all purpose flour
  • 3/4 cup milk of choice
  • 1 1/4 cup cheese American and Swiss (make a 50/50 blend)

Instructions

  • In a small saucepan, boil some water over medium heat.
  • Add the elbow pasta and cook according to package instructions until desired softness. It will take about 8 minutes.
  • In a frying pan, add the butter and flour. Mix until the butter melts, then add the milk. Stir constantly until it forms a cream.
  • Add shredded cheese and mix until fully melted.
  • Drain the elbow macaroni and stir into the cheesy sauce.
  • Serve immediately.

Notes

  • Shred your own cheese or cut sliced cheese into small pieces before melting. This will allow the cheese to melt more easily. Using pre-shredded cheese influences the flavor as there are some other ingredients added to avoid caking, and it does not melt as well!
  • Use the types of cheese suggested in this recipe for the best flavor. If you use other types of cheese this recipe will change substantially as the combination of cheeses is what makes it perfect!
  • Do not overcook the pasta, cook until it’s al dente and then add to the cheesy sauce and let it soften a little more.
