Ingredients  

Ricotta Pancakes
  • 1 cup ricotta cheese
  • 3 eggs
  • 1/2 cup all purpose flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 2 tsp coconut oil for greasing the pan

Instructions

  • In a bowl, whisk the eggs and mix in the ricotta.
  • Add the flour, salt (optional), baking powder and mix.
  • Heat 1 tsp coconut oil or butter in a skillet over low to medium heat.
  • Spoon out the batter about 1 tbsp per pancake. When you see small bubbles on top, flip and cook the other side
