Ricotta Pancakes

ricotta cheese

eggs
1/2
cup
all purpose flour
1/4
tsp
salt
1/2

baking powder

tsp
coconut oil
for greasing the pan
Instructions
In a bowl, whisk the eggs and mix in the ricotta.
Add the flour, salt (optional), baking powder and mix.
Heat 1 tsp coconut oil or butter in a skillet over low to medium heat.
Spoon out the batter about 1 tbsp per pancake. When you see small bubbles on top, flip and cook the other side
