Add about ½ tsp butter or a drizzle of olive oil to the pan and spread evenly.
Pour the batter to the skillet and tilt it into a circle to spread the crepe batter evenly.
Notes
I use a 10” pan, so I need about 1/3 cup batter for each crepe. If using a smaller 8” pan, you may use ¼ cup batter.
I recommend using a high-speed blender to best texture and smooth consistency. I like using this one from Ninja.
You may use a regular non-stick skillet to make these crepes, but this hard-anodized 10-in crepe pan from Cuisinart has gained my heart. It is perfect for cooking crepes and pancakes!
If your batter looks too thick, you can add a little bit more milk or water.
