Equipment

Ingredients 
 

  • 1 cucumber
  • 1 cup greek yogurt unflavored
  • 1 tbsp lemon juice
  • 1/4 cup red onions
  • 1/8 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1 tbsp dill fresh
  • 1 tbsp mint fresh

Instructions

  • Cut the cucumber into thin slices using a mandolin.
  • Pat dry with paper towels to remove moisture.
  • In a bowl, combine all the ingredients until smooth.
  • Combine the cucumber slices with the dressing in one bowl.
  • Store in the fridge until ready to serve.

Notes

  • I used finely chopped red onions and didn’t add too much as this salad was also served to my 3-year-old, but feel free to add sliced onions and add more of it to your taste!
