Cut the cucumber into thin slices using a mandolin.
Pat dry with paper towels to remove moisture.
In a bowl, combine all the ingredients until smooth.
Combine the cucumber slices with the dressing in one bowl.
Store in the fridge until ready to serve.
Notes
I used finely chopped red onions and didn’t add too much as this salad was also served to my 3-year-old, but feel free to add sliced onions and add more of it to your taste!
