Peel and cut your fries evenly about ¼ inch wide.
Soak the fries in cold water for 30 minutes.
While you wait, preheat the oven to 430F (220C).
Rinse, drain, and pat dry the potatoes using a clean towel.
In a bowl, add the fries and the olive oil. Mix very well until all the fries are evenly coated.
Pre-mix all the dry seasoning and corn starch. Add the dry mixture to the fries and mix well.
Transfer to a baking sheet covered with parchment paper and spread the fries (make sure not to overload).
Bake for about 35 minutes, flipping halfway through.
Remove from oven and then add salt to taste (omit for babies <12m old).
Let them cool a bit and serve!
