Add all ingredients to a bowl and mix with a spoon until all the coconut milk has incorporated to the dry ingredients.
Make small balls and roll into coconut.
Serve immediately or refrigerate for later.
Notes
Nutrition facts are calculated per serving.
When you start combining the mixture it may look a little dry. But, as you mix, the coconut milk will be just the perfect moisture to create a mixture ideal for rolling. Do not add more liquid or else you will not be able to roll the coconut balls.
There is no need to refrigerate the dough before rolling.
