Instructions
Pre heat oven to 356F and prepare a brownie pan (grease it or add parchment paper for easy removal).
In a medium microwave safe bowl, add the berries and microwave for 30 seconds. This will make the berries softer and easier to mash.
Using a fork, or potato masher, mash the berries. It is ok to leave some lumps!
Add the mashed ripe bananas and combine.
Add quick oats, creamy peanut butter and mix with a spatula.
Press the oat mixture into a brownie pan.
Bake for 30 minutes. Let it cool for at least 10 minutes before cutting.
Notes
Make sure to use ripe bananas. The riper, the sweeter the berry bars will be.
Don’t skip microwaving the berries before mashing. It does make the process much easier, especially when using strawberries.
Make sure you use quick porridge oats in this recipe for the best results.
