Equipment

Ingredients 
 

  • 1/3 cup blueberries
  • 1/2 cup strawberries cut small, then measure
  • 3 bananas extra ripe
  • 2 tbsp peanut butter creamy natural
  • 1 cup quick oats

Instructions

  • Pre heat oven to 356F and prepare a brownie pan (grease it or add parchment paper for easy removal).
  • In a medium microwave safe bowl, add the berries and microwave for 30 seconds. This will make the berries softer and easier to mash.
  • Using a fork, or potato masher, mash the berries. It is ok to leave some lumps!
  • Add the mashed ripe bananas and combine.
  • Add quick oats, creamy peanut butter and mix with a spatula.
  • Press the oat mixture into a brownie pan.
  • Bake for 30 minutes. Let it cool for at least 10 minutes before cutting.

Notes

  • Make sure to use ripe bananas. The riper, the sweeter the berry bars will be.
  • Don’t skip microwaving the berries before mashing. It does make the process much easier, especially when using strawberries.
  • Make sure you use quick porridge oats in this recipe for the best results.
