  • Berries: I like to use a mixture of juicy blueberries and strawberries in this recipe. Feel free to adjust according to your preference. You can use one or the other and make blueberry banana oat bars or strawberry banana oat bars. Raspberries also work well!
  • Bananas: Use overripe bananas with lots of brown spots for sweeter bars.
  • Natural Peanut Butter: Natural peanut butter from 100% peanuts ensures a rich taste. I like adding nut butter for added protein and healthy fats.
  • Quick oats: Quick oats give structure to these banana bars. Old-fashioned oats will not work in this recipe, but you can blend them in a food processor until they break down getting the same texture as quick cooking oats.

  • Pre heat oven to 356F and prepare a brownie pan (grease it or add parchment paper for easy removal).
  • In a medium microwave safe bowl, add the berries and microwave for 30 seconds. This will make the berries softer and easier to mash.
  • Mash the berries. It is ok to leave some lumps!
  • Add the mashed ripe bananas and combine.
  • Add quick oats, creamy peanut butter and mix with a spatula.
  • Press the oat mixture into a brownie pan.
  • Bake for 30 minutes. Let it cool for at least 10 minutes before cutting.
  • Enjoy warm or cold.
