Fluffy Spinach Pancakes

These fluffy spinach pancakes are made with simple ingredients. They are a great wayto serve spinach to your kids and this recipe is suitable for babies 6+ months old.

Ingredients  

  • 1 banana large and extra ripe
  • 1 cup spinach fresh
  • 1/2 cup milk of choice
  • 1 egg large
  • 1 cup oat flour
  • 1/2 tsp cinnamon
  • 1/2 tbsp coconut oil plus more for greasing skillet
  • 2 tsp baking powder

Instructions

  • In a bowl, add the oat flour, cinnamon, baking powder and mix.
  • Add the banana, spinach, egg, coconut oil and milk to a blender and blend on medium until smooth.
  • Pour blender content into bowl and mix with flour mixture.
  • Grease a medium skillet, add the batter, and cook until the sides are firm, and bottoms are golden. Flip and finish cooking.
  • Let them cool, serve or freeze for later.

Notes
