Ingredients
- Banana: Use a ripe banana as this will be the only source of sweetness.
- Spinach: Use fresh spinach in this recipe, frozen will NOT work great.
- Egg: used to bind the ingredients.
- Cinnamon: I love adding cinnamon to recipes, enhances the flavor and contributes to the natural sweetness of these pancakes. Strongly recommend not to skip.
- Oat flour: If you don’t have oat flour, simply add old fashioned oats to a blender or food processor and pulse until turns into flour.
- Coconut oil: used in the batter and you need a little more to grease the pan.
- Milk: I used regular milk, but you can use almond or even baby formula if you desire.
- Baking powder: to make the pancakes fluffy.
