Fluffy Spinach Pancakes

Ingredients

  • Banana: Use a ripe banana as this will be the only source of sweetness.
  • Spinach: Use fresh spinach in this recipe, frozen will NOT work great.
  • Egg: used to bind the ingredients.
  • Cinnamon: I love adding cinnamon to recipes, enhances the flavor and contributes to the natural sweetness of these pancakes. Strongly recommend not to skip.
  • Oat flour: If you don’t have oat flour, simply add old fashioned oats to a blender or food processor and pulse until turns into flour.
  • Coconut oil: used in the batter and you need a little more to grease the pan.
  • Milk: I used regular milk, but you can use almond or even baby formula if you desire.
  • Baking powder: to make the pancakes fluffy.

Step-by-Step Instructions

  • In a bowl, add the oat flour, cinnamon, baking powder and mix.
  • Add the banana, spinach, egg, coconut oil and milk to a blender and blend on medium until smooth.
  • Pour blender content into bowl and mix with flour mixture.
  • Grease a medium skillet, add the batter, and cook until the sides are firm, and bottoms are golden. Flip and finish cooking.
  • Let them cool, serve or freeze for later.

Storage Instructions

These pancakes can be stored in the fridge for up to 3 days and in the freezer for up to 3 months. To reheat, add them to a toaster or microwave.

Serving Suggestions and Substitutions

Here are some ways you can offer these pancakes to your baby or kids:

  • BLW – Cut into fingers and let baby hold and self-feed. You can add a side of fruit and or yogurt for dipping.
  • For kids older than 2 years old, you can add a drizzle of maple syrup on top for added sweetness.
  • For babies and kids, you can spread some ricotta cheese or cream cheese and serve.
