Ingredients  

  • 2 eggs
  • 1 cup cashew butter natural, creamy, unsweetened
  • 1 tbsp avocado oil or neutral vegetable oil
  • 1/2 cup light brown sugar
  • 1/4 cup maple syrup or agave or date syrup
  • 1 tsp vanilla extract
  • 1/3 cup cacao powder unsweetened, 100% cacao
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat oven to 356F (180C) and prepare an 8x8 brownie pan.
  • In a medium bowl, whisk the eggs.
  • Add the natural cashew butter, avocado oil, brown sugar, maple syrup, and vanilla extract. Whisk well until the liquid ingredients are fully combined.
  • Add the dry ingredients: cacao powder, salt and baking powder. Mix with a spatula until incorporated.
  • Stir in the dark chocolate chips (the batter will be thick!).
  • Spread the brownie batter on the prepared brownie pan and bake for 20 minutes.
  • Let the brownie cool down for 20 minutes before cutting.
  • Sprinkle additional sea salt on top if desired, enjoy them warm or save for later!

Notes

  • Lightly grease and line the brownie pan with parchment paper. This is important as this brownie dough is sticky and hard to unmold otherwise.
  • If you like fudgy brownies, bake for 20 minutes. The brownie will continue cooking as it cools down and will have the perfect gooey texture. If you like cakey brownies, bake for five additional minutes.
  • Use creamy natural nut butter, if you use crunchy or regular nut butters the batter will be too thick and won't work!
  • If you like your brownie to be sweeter, add milk chocolate chips instead.
  • These brownies will not have a crinkled top as it is a low sugar recipe and the crinkled tops are achieved by having the excess sugar float to the top of the brownie during the baking process.
