These Healthy Flourless Dark Chocolate Brownies (Fudgy) taste like a petit gateau! They are flavorsome, protein-packed, very chocolatey, and have a fun, fudgy texture that kids and the whole family will LOVE! If you are a fan of dark chocolate, this recipe is for you!
My whole family loves brownies! I typically bake my almond flour brownies or Ghirardelli dark chocolate boxed brownies, which are both delicious. Still, I wanted to make something flourless and protein-packed as an alternative. As a result, I created these fudgy, low-sugar, yet perfectly sweet (if you like dark chocolate) brownies! Turned out to be our new favorite dessert paired with vanilla ice cream!

Ingredients
Here is what you need to make my healthy brownie recipe:
- Cashew butter: I love adding it to baked goods because it tastes more neutral than natural peanut butter. But feel free to add your favorite nut butter to this recipe and ensure it is unsweetened and smooth.
- Avocado oil: I use a small amount of avocado oil, which helps with moisture and the overall fudginess of these brownies. Use a neutral-tasting vegetable oil; avocado is your healthiest bet!
- Refined sugar-free sweeteners: This recipe calls for a mix of brown sugar and maple syrup, which tastes incredible!
- Eggs: to give structure to the brownies.
- Vanilla extract: For added flavor. I love using this water-based vanilla extract!
- Cacao powder: Use unsweetened cocoa powder for maximum chocolate flavor.
- Baking powder: I like using a small amount of baking powder in this rich double chocolate brownie to make it rise slightly. As it is flourless, it also helps with the overall final texture.
- Salt: A little bit of salt to enhance the double chocolate flavor of these brownies! It is optional but highly recommended.
- Dark chocolate chips or chunks: I love using 60% dark chocolate in my recipes. High-quality chocolate makes a big difference in the result!
Step by Step Instructions
Follow these simple steps to make the best rich double chocolate brownie:

- Stir in the dark chocolate chips (the batter will be thick!).
- Spread the brownie batter on the prepared brownie pan and bake for 20 minutes.
- Let the brownie cool down for 20 minutes before cutting.
- Sprinkle additional sea salt on top if desired, enjoy them warm or save for later!
Tips for the Perfect Fudgy Flourless Brownies
- Lightly grease and line the brownie pan with parchment paper. This is very important as this brownie dough is sticky and will be hard to unmold otherwise.
- If you like fudgy brownies, bake for 20 minutes. The brownie will continue cooking as it cools down, and it will have the perfect gooey texture. If you like cakey brownies, bake for five additional minutes.
- Use creamy natural nut butter, if you use crunchy or regular nut butters the batter will be too thick and won’t work!
- If you like your brownie to be sweeter, add milk chocolate chips instead.
- These brownies will not have a crinkled top as they have no refined sugars!
Tools Needed
Here is a list of what you need to make the best flourless brownies that your kids will love:
Storage Instructions
- Room temperature: These dark chocolate fudgy brownies can be stored at room temperature for up to 3 days in an airtight container to ensure they are soft and fresh. If you leave them uncovered, they will dry out.
- Fridge: The brownies can be stored in an airtight container in the refrigerator for up to 5 days. Warm them up in the microwave for 10-15 seconds if you like them warm.
- Freezing: You can freeze these healthy brownies for up to 3 months! If you have a sweet tooth, this is amazing, and you will always have a sweet treat handy! Please wait for the brownies to cool down, stack the pieces using parchment paper in between them, and freeze them in a Ziploc bag. Defrost the brownies in the microwave and enjoy!
Serving Suggestions and Substitutions
- Snack: You can serve these dark chocolate brownies with fruit as a snack.
- Dessert: These brownies make a great dessert! Pair them with your favorite ice cream for a melt-in-the-mouth sweet treat that the entire family will love!
Sugar replacements: You may replace the brown sugar with your preferred dry sweetener. Coconut sugar also works great! Maple syrup may be replaced with agave syrup or date syrup.
Nut butter: You may use your favorite creamy and unsweetened 1-ingredient nut butter, such as almond butter, cashew butter, sunflower seed butter, or natural peanut butter. I like using cashew or almond butter as they have a milder flavor and will help the chocolate flavors stand out in these brownies!
Frequently Asked Questions
This brownie wasn’t developed to be a low-calorie dessert. It is high in protein, with 328 kcal per slice and 8g of protein (considering nine slices per brownie pan).
Brownies are not nutritionally dense. However, this brownie recipe is high in protein due to the eggs and cashew butter. Dark chocolate is also a healthy component and is full of antioxidants.
This flourless brownie recipe uses healthier sugar alternatives. The sweetness achieved using a combination of brown sugar and maple syrup resulted in surprising results and a delicious brownie. However, you won’t be able to achieve a crinkled brownie top, as this effect is caused by the granulated sugar in excess that floats to the top of the brownies during baking.
Getting the perfect crust means choosing a recipe with just the right proportions of granulated and brown sugars. More brown sugar leads to dense brownies, and the additional moisture can cause their upper crust to be more solid than delicate.
