dark chocolate chips
60% dark chocolate
Instructions
Preheat oven to 350F.
In a medium bowl, mix dry ingredients: quick oats, oat flour, brewer’s yeast, baking soda, baking powder and cinnamon.
In a large mixing bowl, add butter, eggs, coconut sugar and vanilla extract. Use anelectric hand mixer to blend or a whisk.
Add dry ingredients to the bowl and combine with wet ingredients.
Gently stir in chocolate chips (or raisings).
Shape the cookies using a spoon or cookie scoop. Place them about 2 inches apart as they will spread while baking. Press each cookie with a spoon.
Bake for 10 minutes. Remove from oven and let cookies cool down to firm up.
Notes
Quick oats:
If you don’t have quick oats, you can quickly process old fashioned oats in a food processor for 15-20 seconds.
Oat flour:
If you don’t have oat flour, you can process old fashioned oats in a food processor until they become a fine powder.
