Pumpkin Banana Pancake Bites

Banana slices, coated in pumpkin pancake batter, these are soft and will melt in your mouth!

Equipment

Ingredients  

  • 3 bananas sliced (read recipe notes - you can use less bananas if you desire)
  • 1/2 cup all purpose flour
  • 1/2 cup oat flour
  • 1 cup milk of choice
  • 1 egg
  • 2 tbsp butter melted
  • 1/2 cup pumpkin purée
  • 1 tsp baking powder
  • 1 tsp cinnamon

Instructions

  • Slice the bananas into 1/3-inch-thick slices.
  • In a bowl, mix the flours, cinnamon, and baking powder.
  • Add the remaining ingredients and whisk until smooth.
  • Heat a skillet over medium heat, melt some butter or coconut oil.
  • Use a fork to coat the banana slice into the batter.
  • Add the banana bites to the pan, flip when golden on bottom then cook for another minute.
  • Continue the process until the bananas are finished (see recipe notes).

Notes

  • Nutrition facts are calculated per serving. 
  • You can choose to use as many bananas as you like. If using only 2 for example, you can make some regular sized pancakes without adding the bananas. If serving to kids > 2 years old, you can add a drizzle maple syrup to the batter before cooking or after!
