Ingredients to Make the Best Pumpkin Banana Pancake Bites
- Bananas – use ripe bananas with brown spots to ensure sweetness.
- All purpose flour
- Oat flour
- Milk – I used regular, but you can use unsweetened almond milk or even baby formula if desired.
- Egg
- Butter
- Baking powder
- Pumpkin purée – make sure you use 100% pumpkin purée, not pie filling! If you choose to make it yourself, check out my homemade pumpkin purée recipe!
- Cinnamon
Step-by-Step Instructions
- Slice the bananas into 1/3-inch-thick slices.
- In a bowl, mix the flours, cinnamon, and baking powder.
- Add the remaining ingredients and whisk until smooth.
- Heat a skillet over medium heat, melt some butter or coconut oil.
- Use a fork to coat the banana slice into the batter.
- Add the banana bites to the pan, flip when golden on bottom then cook for another minute.
- Continue the process until the bananas are finished (see recipe notes).
Recipe Notes
You can choose to use as many bananas as you would like. After you are done with the banana bites, if there is left over batter you can make some regular sized pancakes. when serving to kids > 2 years old or adults, you can add a drizzle maple syrup to the batter before cooking or after!
Storage Instructions
These pumpkin banana pancake can be frozen! Simply wait for them to cool, add to a freezer bag and store for up to 1 month. Defrost in the microwave in 10s increments as total time will depend on the number of pancakes you heat at a time.
Serving Suggestions and Substitutions
You can serve these pancakes as breakfast or snack. Since it has no sugar added, it is Ok to serve to babies! Just make sure that you have offered all the ingredients separately before as these pancakes contain allergens. I suggest offering around 8, 9 months. If desired, you can substitute the cow’s milk for formula or plant milk, however, it is Ok to add cow’s milk in small quantities into recipes for babies starting at 6 months old!
If doing baby led weaning, you may choose to cut the bananas into fingers (make sure not to cut too thin as they will break apart). Of your baby is 9+ months and has already developed pincer grasp, you can cut the pancake bites into smaller squares and let the baby self-feed.
For kids > 2 years old, you can skip the bananas if desired and cook the batter adding a little bit of maple syrup before cooking or drizzle over the top of the pancakes.
