These super cute Santa Pancakes are a fun Christmas breakfast that the kids will love!

Equipment

Ingredients  

Batter
  • 1 cup milk
  • 1 egg large
  • 1 tbsp butter melted or vegetable oil
  • 1/2 cup all purpose flour
  • 1/2 cup oat flour
  • 2 tsp baking powder
  • 1.5 tbsp coconut sugar or brown sugar
Decorating Santa - Ingredients for 1 Santa Pancake
  • 13 raspberries
  • 2 blueberries
  • 1 banana

Instructions

Preparing the Pancakes

  • Whisk the egg.
  • Add the melted butter, milk, and mix.
  • In a separate bowl, mix the flours, sugar, and baking powder.
  • Combine dry and wet and gently mix the batter.
  • Heat a skillet over low heat, add a little butter or coconut oil to grease (if needed).
  • Scoop 3 tablespoons to make Santa's face in a round shape.
  • Wait for bubbles to appear, flip and finish cooking.
  • Repeat making Santa pancakes or switch to making regular pancakes (for littles I use 1 tbsp batter for each pancake).

Decorating Santa

  • Place 1 large circle to form Santa's Face.
  • Place raspberries horizontally to make Santa’s hat.
  • Cut a banana in thin slices and place them according to picture instructions.
  • Add a raspberry to make the nose.
  • Add blueberries for the eyes.
