These Santa Pancakes are a cute and fun Christmas breakfast that the kids will love! Made in under 15 minutes, this is a great recipe to get the little ones involved in the kitchen and to make a fun holiday tradition.

Ingredients
You need a few simple ingredients to make the cutest Santa pancakes:
- Milk
- Egg
- Coconut sugar
- Butter
- All-purpose flour
- Oat flour
- Baking powder
- Banana: to make Santa’s beard and hair.
- Raspberries: To make Santa’s hat and nose.
- Blueberries: To make Santa’s eyes.
Step by Step Instructions to Make Santa Pancakes
Prepare the Batter and Cook the Pancakes:
- Whisk the egg until foamy.
- Add the melted butter, milk, and mix.
- In a separate bowl, mix the flours, sugar, and baking powder.
- Combine dry and wet and gently mix the batter.
- Heat a skillet over low heat, add a little butter or coconut oil to grease.
- Using a spoon, scoop 3 tablespoons to make Santa’s round face.
- Wait for bubbles to appear, flip and finish cooking.
- Repeat making Santa pancakes or switch to making regular sized pancakes (for littles, I use 1 tbsp batter for each pancake).
Assemble / Decorate:
- Place raspberries horizontally to make Santa’s hat.
- Cut a banana in thin slices and place them according to picture instructions to make Santa’s beard and hair.
- Add a raspberry to make the nose.
- Add blueberries for the eyes.
Storage Instructions
These pancakes can be refrigerated for up to 3 days and frozen for up to 3 months in an airtight container or Ziploc bag. Defrost overnight in the fridge or place them in the microwave or toaster.
Serving Suggestions and Substitutions
This recipe is a healthier version of American Pancakes, it does contain a small amount of sugar. If you plan to serve these pancakes to babies or kids < 2 years of age you can try my Baby Friendly Banana pancakes that are sugar free!
- Milk: You can replace almond milk for your milk of choice.
- Oat flour: If you wish, instead of using ½ cup oat flour and ½ cup all-purpose flour, you can substitute for 1 cup all-purpose flour.
- Butter: You can replace it for vegetable oil if desired.
- Coconut sugar: You can replace for brown sugar.
