This tomatozucchini pasta sauce is a great way to add more veggies to your child’s meal. You can serve it with pasta, as pizza sauce, with meatballs you name it!
Cut all the ingredients into chunks (except for garlic).
Prepare a baking sheet with parchment paper or grease with a little bit of olive oil.
Add all ingredients (except salt and basil), mix well with your hands to ensure theveggies are covered in olive oil evenly.
Bake at 356F (180C) for 35 minutes until start to brown.
Remove from oven and let cool a bit.
Add some basil leaves if desired and blend until smooth.
Add salt to taste (omit for babies < 12 months old).
Notes
Nutrition facts were calculated for each serving (1 cup of sauce).
This sauce can be served to babies 6+ months as pasta sauce, with meatballs, etc.
It is very EASY to make and freezes beautifully. I like to freeze each cup of sauce individually in freezer bags or use small 120ml glass jars which are the perfect size for one meal for babies and toddlers.
