What’s Dragon Fruit (Pitaya)?
Dragon fruit, also known as Pitaya, is a tropical fruit native to Mexico and Central America. It has a very mild, sweet taste, like a combination of a Kiwi and a pear. Its flesh is so tender that you can scoop it with a spoon! In this recipe, I used the less common type of Pitaya with pink pulp. The most widely available variety has white pulp. Both are considered nutrient-dense fruits, given their high amount of fiber and magnesium and low-calorie content.
Ingredients
To make this incredibly fun and beautiful dairy-free smoothie you will need the following:
- Pitaya: You can buy fresh pink pitaya, cut it into cubes, and freeze it to use in this smoothie, or you can purchase the pre-packaged frozen fruit from Pitaya Foods. The dragon fruit adds a beautiful color to this smoothie. If using fresh pitaya, make sure the label says red/pink pitaya, as all the varieties look the same on the outside.
- Strawberries: Use frozen strawberries to add a special flavor to this smoothie.
- Banana: This smoothie has a great creamy texture thanks to frozen bananas. You can use fresh bananas if you’d like it to be less thick. If you don’t like bananas or have allergies, you can substitute them for mangoes.
- Apple Juice: I wanted to make this a dairy-free smoothie, so I tried using apple juice, and the flavor turned out amazing! Make sure you use a sugar-free, 100% apple juice if making this for littles younger than two years old.
How to Make the Best Dragon Fruit Smoothie
Using a high-speed blender, add all the ingredients and blend until smooth and creamy.
Tips
- Add the juice first to facilitate blending. If you don’t have a good blender, you may need to add the frozen fruits in steps!
- You can double the recipe and make popsicles; I bet the kids will love them!
