These soft crepes can be made savory or sweet, simply skip the salt and add some maple syrup to the batter! This recipe is so versatile, you can serve them as traditional folded crepes or make sushi rolls.

Ingredients

Here are the few ingredients you’ll need to prepare spinach crepes:

  • Spinach: for added nutrition and the vibrant green color.
  • Egg: I use a large egg to bind the crepe together.
  • Milk: Adds moisture to the batter. I used whole milk, but you may replace it with your milk of choice.
  • All-purpose flour: Flour gives structure to the crepes. Make sure to not pack the flour too much as it will result in thicker than ideal crepes.
  • Salt: optional, or for sweet crepes replace it with honey or maple syrup.

Step by Step Instructions

  • Blend all ingredients until completely combined.
  • Heat a nonstick skillet over medium-low heat.
  • Add about ½ tsp butter or a drizzle of olive oil to the pan and spread evenly.
  • Pour the batter to the skillet and tilt it into a circle to spread the crepe batter evenly.

Recipe Tips

  • I use a 10” pan, so I need about 1/3 cup batter for each crepe. If using a smaller 8” pan, you may use ¼ cup batter.
  • I recommend using a high-speed blender to achieve the best texture and smooth consistency. I like using this one from Ninja.
  • You may use a regular non-stick skillet to make these crepes, but this hard-anodized 10-in crepe pan from Cuisinart has gained my heart. It is perfect for cooking crepes and pancakes!
  • If your batter looks too thick, you can add a little bit more milk or water. Normally the first crepe does not look very good, the second one will be much easier, I promise!

Storage Instructions

You can store these spinach crepes in the fridge for up to 2 days.

Serving Suggestions and Substitutions

These spinach crepes are so versatile that you can serve them with any meal.

Breakfast: Spread cream cheese and a side of fruit. Or make the sweet version skipping the salt and adding some maple syrup and make a banana roll.

Lunch, Brunch or Dinner: Make spinach sushi rolls with cream cheese, smoked salmon and avocado for a nutritious meal. Pair with fruit and done!

Frequently Asked Questions

Should crepes be crispy or soft?

Generally, crepes are soft. You cook them until the edges look a little crisp and flip. If your crepes are getting too crispy it could mean that the pan was too hot. You should be able to add the batter to the pan and have enough time to tilt it so that the batter forms a thin layer over the base of the pan. If it starts to set before that, the pan is too hot.

What are crepes?

Crepes are the French version of pancakes. They are thin and not fluffy as they don’t contain baking powder. Often, they are filled and folded.

Christmas Grinch Crepes

Make these a fun Christmas breakfast or Brunch calling them Grinch crepes and the kids will be excited! Simply add some cream cheese or ricotta for a “white” filling and decorate with strawberries or other red fruit.
