These snowman pancakes are soft and fluffy, made with only a few ingredients they are a kid-favorite holiday breakfast!

Ingredients
Here are the ingredients you need to make these cute snowman pancakes:
Ricotta Pancakes
- Ricotta
- All-purpose flour
- Eggs
- Salt (optional, omit for babies <12m old)
- Baking powder
- Coconut oil: for greasing the pan
Snowman Decoration
- Powdered milk or cream cheese: to cover the pancakes in white.
- Carrot: for the nose.
- Apple slice and raspberries: earmuffs.
- Strawberries: Scarf.
- Blueberries: Buttons.
- Pretzels: for the arms and hands.
- Chocolate chips: for the eyes.
- Mini chocolate chips: for the smile.
Step by Step Instructions
Making the pancakes:
- In a bowl, whisk the eggs.
- Mix in the ricotta.
- Add the flour, salt, baking powder and mix.
- Heat 1 tsp coconut oil in a skillet over low to medium heat.
- Mold the pancakes using a spoon. For the snowman head I used 1 tbsp, for the body I used 2 tbsps.
- When golden on the bottom, flip and cook the other side.
Decorating the Snowman:
- Place the snowman head and body on a plate.
- Cover with some powdered milk or cream cheese.
- Cut a small piece of carrot in a triangle shape for the nose.
- Cut a small thin slice of apple for the earmuffs and place underneath the snowman head. Then place 2 raspberries, one on each side.
- Use chocolate chips to make the eyes and the smile. See picture for details, I used regular sized chips for the eyes and mini for the smile.
- To make the scarf, cut a piece of strawberry and make a wavy shape with a knife.
- Use pretzels to make the arms and hands, break them into the correct sizes and place on each side of the snowman.
- For the buttons, place 3 blueberries on the body.
- To finish, you can spread some shredded coconut.
Storage Instructions
These ricotta pancakes can be stored in the fridge for up to 3 days and in the freezer for up to 3 months. Make sure to use a freezer bag or airtight container.
To reheat, place them in the microwave for 10s increments until warm, or use a toaster.

- Ingredient list for snowman decoration is enough for 5 snowmen. If making less you can reduce the quantity and make regular pancakes. Serve them with maple syrup or cream cheese and fruit for a nutritious breakfast.
