Health Benefits of Chickpea (Garbanzo Beans)

  • Chickpeas are a type of legume in the same family as kidney beans and peanuts. They’re also called garbanzo beans. They have a buttery, nutty flavor and creamy texture.
  • Chickpeas and other legumes have calcium, magnesium, fiber, and other nutrients for strong bones. They are also rich in choline, a nutrient that helps make important chemicals for memory, mood, muscle control, and other brain and nervous system activity.

Ingredients

This recipe uses only four healthy ingredients:

  • Dates: I like using Medjool dates as they are softer and sweeter! They blend well in the food processor, adding the perfect flavor and sweetness to this recipe.
  • Chickpeas: The secret ingredient in this recipe. I like cooking my chickpeas from scratch, but if using canned, drain and rinse well before adding them to the food processor.
  • Cacao powder: Use unsweetened cocoa powder for the best chocolatey flavor.
  • Peanut butter: To help bind all the ingredients together for a delicious peanut flavor. Use natural peanut butter without oil or sugar added (100% peanuts in the composition preferred).
  • Coconut flakes: Optional for added texture and taste, use unsweetened desiccated coconut. I like using finely shredded coconut, but any kind will work as we blend everything in a food processor.
  • Dark chocolate chips: Optional if you have a sweet tooth and like these no-bake bites sweeter.
  • Pure vanilla extract: Optional for added flavor.

Tips to Make Healthy Brownie Bites

Here are my insights into making the perfect brownie bites the first time:

  • For the best results, use Medjool dates, as they are softer and sweeter.
  • Measure the ingredients per the recipe card to ensure the dough is easily moldable.

Tools Needed

Food Processor: This recipe calls for a food processor. A blender is not powerful enough to break all the date pieces into a smooth dough.

Storage Instructions

You can serve these as a snack for babies and toddlers. It is the perfect way to add some plant-based protein to their diets. These can also be molded into little chocolate eggs, making an excellent option for Easter snacks for littles under two years of age.

Peanut butter: You can use the nut butter of your choice, such as almond butter, cashew butter, or sunflower seed butter.

Frequently Asked Questions

Why do I need to soak chickpeas before cooking?

Soaking eliminates phytates, which can get in the way of your body absorbing the calcium in chickpeas.

Do I need to remove the chickpea skins before adding them to the food processor?

No, you don’t need to remove the skins!
