Bliss Balls For Babies

When my son was 1 year old, I made these carrot coconut bites for the first time. At the time, he started refusing to eat carrots in main meals and, to my surprise, this was a huge hit!

Bliss Balls with Dates

I use dates in this recipe to provide the sweetness and consistency needed for the mixture to form into balls. Medjool dates are my preferred choice as they are sweeter and softer. When using dehydrated dates, soak them in hot water for 15 minutes and drain them before adding them to this recipe.

Ingredients

This recipe uses a few simple ingredients:

  • Carrots are a great source of beta carotene, which promotes healthy eyes. They are also packed with antioxidants and essential vitamins and minerals.
  • Walnuts are rich in omega-3 fats and are an excellent source of vitamins and minerals.
  • Pitted Medjool Dates: Medjool dates are the main source of sweetness in these bliss balls. If you are using more moist dates, there is no need to pre-soak. However, if the dates are dry, just pre-soak them in hot water for a few minutes to soften, drain, and add to the recipe.
  • Cinnamon: Adds flavor and enhances the natural sweetness of the bliss balls.
  • Unsweetened Desiccated Coconut: Used in the recipe to add texture and for rolling.
  • Almond Flour: Almond flour provides consistency and adds a nutty flavor to this recipe.

Step-by-Step Instructions

  • Add the raw carrots and walnuts to a food processor and blitz to ensure no large pieces are left.
  • Add the remaining ingredients and blitz until well combined and sticky. Depending on your food processor, this may take 4-5 minutes. Scrape down the sides a few times if needed.
  • Spoon the crumbly mixture and press with your fingers to form balls.
  • Roll the balls in the coconut (optional). Repeat to make 20 bliss balls.
  • Store the bliss balls in the fridge in an airtight container or freeze (see freezing instructions).

Storage Instructions      

  • These carrot coconut bites can be stored for 3 days in the fridge or up to 3 months in the freezer.
  • To freeze them, you can use a container with parchment paper between layers to firm the bliss balls and then transfer them to a freezer bag to save space. You can also freeze directly in freezer bags, trying to keep the balls slightly separated so that they won’t stick together.
  • To defrost, remove the desired quantity and place them in the fridge overnight.

Can I serve bliss balls to babies?

This recipe contains walnuts and almonds, which are common food allergens. To minimize future allergies, allergens should be introduced with caution, ideally between 6 and 9 months of age. Always check with a pediatrician or pediatric dietitian before introducing allergens.
Also, always quarter these balls before serving them to babies due to their round shape.

Are Bliss Balls healthy?

Ingredients  

  • 230 g Carrots About 2 medium raw carrots peeled
  • 70 g Medjool dates About ten units
  • 1/4 cup Walnuts or Pecans
  • 2 tbsp Chia seeds
  • 1/2 cup Almond flour
  • 4 tbsp Unsweetened desiccated coconut + more for rolling if desired
  • 1 tsp Cinnamon
  • 1/4 tsp Nutmeg

Instructions

  • In a food processor, add the carrots and walnuts and blitz to ensure there are no large pieces left.

Notes

  1. Nutrition values of all ingredients were divided by 20, the number of servings for this recipe.
  2. If using dates that are too dry, soak them in hot water for a few minutes, drain and add to recipe.
  3. After mixing all the ingredients you will be left with a crumbly sticky mixture. Use 1 tbsp to scoop the mixture and press with your fingers to form balls.
