Bliss Balls For Babies
When my son was 1 year old, I made these carrot coconut bites for the first time. At the time, he started refusing to eat carrots in main meals and, to my surprise, this was a huge hit!
Bliss Balls with Dates
I use dates in this recipe to provide the sweetness and consistency needed for the mixture to form into balls. Medjool dates are my preferred choice, as they are sweeter and softer. When using very dry dates, simply soak them in hot water for 15 minutes to soften and drain before adding to this recipe.
Ingredients
This recipe uses a few simple ingredients:
- Carrots: are a great source of beta carotene, promoting healthy eyes. It is packed with antioxidants and are a great source of important vitamins and minerals.
- Walnuts: are rich in omega-3 fats and an excellent source of several vitamins and minerals.
- Pitted Medjool Dates: Main source of sweetness for these bliss balls. If you are using Medjool dates which have more moisture, there is no need to pre-soak. However, if the dates are dry, just pre-soak them in hot water for a few minutes to soften, drain and add to the recipe.
- Cinnamon: Adds flavor and enhances the natural sweetness of the bliss balls.
- Unsweetened Desiccated Coconut: Used in the recipe to add a little more texture and for rolling.
- Almond Flour: Used to provide consistency and add a nutty flavor to this recipe.

Storage Instructions

- To freeze, you can use a container with parchment paper between layers to firm the bliss balls and then transfer to a freezer bag to save up space. Or you can freeze directly in freezer bags, trying to keep the balls slightly separated so that they won’t stick together.
- To defrost, remove the desired quantity place them in the fridge overnight.
