  • Old fashioned oats: I love baking with oats, they give the cookies a chewy texture and are a much healthier option. Full of fiber, oats keep you full and regulate blood sugar levels.
  • Strawberries: I used fresh strawberries, frozen will not work on this recipe as they will have too much water and will make the cookies soggy.
  • Bananas: The riper the bananas, the sweeter your strawberry cookies will be!
  • Peanut butter: Make sure to use all-natural peanut butter without any sugar added. You can replace it with almond butter as well.
  • White chocolate chips: Pair well with the strawberry flavor. This is optional, but highly recommended!

Step by Step Instructions

  • Preheat the oven to 356F/180C and line a baking tray with parchment paper.
  • Mash the bananas.
  • In a medium bowl, mix with the other ingredients until combined.
  • Form 16 small balls of cookie dough, place them on the lined baking tray and press into a cookie shape. If desired, top with extra chocolate chips or strawberries.
  • Bake for 15 minutes until golden on the edges.
  • Let the cookies cool for 10 minutes before serving.

Cooking TIps

  • When the cookies come out of the oven, they will still be soft, let them cool to harden a bit.
  • Do not overbake the cookies. Start checking the cookies around the 12-minute mark. When cookies get golden on the edges, they are done.
  • Skip the white chocolate chips if serving these cookies to children less than 2 years old. This way the cookies will be completely sugar free!
  • If you are worried using old fashioned oats for younger babies, you can use quick oats instead!

Storage Instructions

To store: Keep these fresh strawberry oatmeal cookies in a sealed container or bag in the fridge for up to 3 days. Due to the fruit, it is not advisable to keep them at ambient temperatures. You can eat them cold or reheat for a few seconds in the microwave.

To freeze: Healthy strawberry cookies can be frozen in Ziploc bags for up to 1 month! To defrost, place them overnight in the fridge or reheat in the microwave.
