Ingredients
You only need a few ingredients to make these sugar free pumpkin cookies:
- Banana: make sure to use a very ripe banana, as this will be the main source of sweetness.
- Pumpkin purée: Make sure to select 100% pumpkin purée, not pie filling.
- Almond flour: Rich in vitamin E and other antioxidants, almond flour is incredibly nutritious.
- Old fashioned oats: I like to combine old fashioned oats with almond flour as it gives a little texture to the cookies. Oats are packed with fiber, so a great addition to the recipe as well.
- Pumpkin spice: Adds flavor and warmth to this recipe. You can replace it for cinnamon if you prefer.
- Mini dark chocolate chips: Optional
Step-by-Step Instructions
- Preheat oven at 356 F (180C).
- In a bowl, combine the mashed banana, pumpkin puree, almond flour, oats, and pumpkin spice.
- Scoop out tablespoon sized balls.
- Flatten and decorate with chocolate chips if desired.
- Bake for about 17 minutes.
- Let them cool, serve or refrigerate for later.
Storage Instructions
Let the cookies cool down, place them in a plastic bag or airtight container and refrigerate for up to 3 days and freeze for up to 3 months.
Defrost overnight in the fridge or microwave for a few seconds.
