Made with fresh raspberries and homemade lemonade, these raspberry lemonade popsicles are a great refreshing treat for hot summer days! These have sweet and tangy flavors that combine perfectly into a yummy snack for the little ones. My son simply loves these popsicles since he was about 9 months old, even though they are not overly sweet!

INGREDIENTS TO MAKE THE BEST SWEET AND SOUR POPSICLE
- Fresh raspberries: sweet with a tart tone, these delicious colorful fruits are packed with vitamins, minerals, antioxidants, and fiber.
- Dates: Used to sweeten the popsicles, however they will not be overly sweet and will keep the tangy flavor.
- Lemon juice: an excellent pairing to the raspberries and excellent source of vitamin C.
- 2 cups water: balance ingredient to our raspberry lemonade popsicles.
STEP BY STEP INSTRUCTIONS
- Add all ingredients to a blender.
- Wait 5 minutes for the dates to soften a bit.
- Blend all ingredients until smooth.
- Add the mixture to popsicle molds and freeze for minimum of 4 hours.
Note: Raspberries do have lots of small seeds which are edible and very nutritious. However, they can be seen and felt in these popsicles. My son loves it this way and so do I, however you may prefer to strain the raspberry lemonade to eliminate the seeds if the texture is not pleasant to your tastes. I do recommend trying before though!
SERVING SUGGESTIONS AND SUBSTITUTIONS
- This is a vitamin C rich popsicle which can be perfectly paired as dessert after an iron rich meal to increase iron absorption.
- Dates can be substituted for honey for children older than 2 years old.
- This recipe is suitable for babies 6+ months as it only contains the dates as a sweetener. However, the amount of sugar from the dried dates is about 5g per serving, therefore these need to be served with moderation as any recipe that uses dried fruits.
