Step by Step Instructions

  • Cover the dates with water, microwave for 30 seconds.
  • Wait about 5 minutes for the dates to hydrate and soften.
  • Remove the dates from the soaking water, transfer to a plate and mash with a fork.
  • In a bowl, add all the ingredients and mix with your hands until forms a moldable dough.
  • With a spoon, scoop each ball and pressure with your fingers forming a ball.
  • If desired, roll into crushed roasted peanuts or more coconut.

Recipe Tips

  • As the size of the dates vary, if the mixture seems too dry to mold into balls, add a little bit more peanut butter to adjust.
  • To make the balls you must press the dough with your fingers. Do not try to roll as they will break due to the shredded coconut.
