Why is this a Favorite Recipe:
- Sugar free: suitable for babies and a healthy breakfast idea for the entire family!
- Quick: possible to make even on weekdays if you like to add some variation to the menu.
- Nutritious: I use wholesome ingredients, always look for good bread options with minimum ingredients if using store bought.
Ingredients to Make Peanut Butter and Banana French TOast:
- Banana
- Egg
- Milk of choice
- Peanut butter: I use natural 100% peanuts.
- Cinnamon: Contributes to the sweetness and adds flavor.
- Bread: I like using whole wheat bread or sourdough. But any bread will work.
Step by Step Instructions:
- Mash the banana until smooth.
- Add the egg and whisk until combined.
- Add the peanut butter, cinnamon and milk and whisk until combined.
- Heat the coconut oil in a pan over medium heat.
- Place the bread into the mixture and flip to coat both sides.
- Cook each side of the bread until golden brown.
- Repeat with all slices of bread.
- Cut into desired shapes and serve!
Recipe notes:
- You can replace the coconut oil with butter for frying. I added 1 tbsp as it is needed for the French toast not to stick, otherwise it won’t look as nice and toasted.
- For babies, cut bread into sticks. For babies 9+ months old cut into small squares to practice pincer grasp, for older toddlers you can cut into larger squares.
Variations and Substitutions:
- You can make this recipe omitting the peanut butter if desired for a nut free option.
- You can replace the banana with one shredded apple if desired.
- For frying, coconut oil can be replaced with butter.
Frequently Asked Questions:
Yes! The carbohydrates from the banana will give you energy, and then the protein and healthy fats from the peanut butter will keep you full.
Make sure the batter is not too thick for the bread to soak in. Remember to use a nonstick pan and grease it with plenty coconut oil or butter, this will ensure a beautiful golden crust.
