Ingredients
- Oat flour: is a healthier alternative to wheat flour. It is packed with fiber, minerals, and B vitamins.
- Powdered milk: Use unsweetened powdered milk for texture and flavor.
- Corn Starch: Used to improve crunchiness.
- Butter: You can use regular salted butter in this recipe. Butter will be melted and added to the dough.
- Turbinado sugar: This is a low-sugar cookie recipe; the turbinado sugar combined with the powdered milk gives the perfect sweetness. Granulated sugar or brown sugar would also work.
- Water: A small amount is used to add moisture to the dough.
- Vanilla Extract: Used for added flavor.
- M&M’s: These are optional and can be used to decorate. Remember to use them with moderation, as they contain artificial food coloring.
Step-by-Step Instructions
- Use your hands to mix the oat flour, powdered milk, cornstarch, melted butter, turbinado sugar, and vanilla. The mixture will be crumbly.
- Add the water and mix until the dough is formed and stops sticking to your hands. In the beginning, it will stick, but as you keep mixing, it will incorporate the water and become soft and moldable.
- Place the dough between 2 pieces of parchment paper and open it to 1/8” thickness (3mm) for the perfect crunchiness.
- Transfer to a baking sheet covered with parchment paper.
- Bake at 356F (180C) for 12 minutes.
- Decorate with M&M’s or melted chocolate if desired.
Recipe Notes
- If you want the M&Ms to “stick” to the cookie, you need to add them before baking. Note that they may crack a little during baking.
- They will not “stick” to the cookies if you add them after baking.
